Cherry Season
It’s Cherry Season in Cape Town! I tried making a Cherry Clafoutis for the first time, and it turned out really well, using cherries I bought at the amazing OZCF Market (a must visit when you’re in Cape Town).
But before baking, of course I had to use my cherries to make patterns, and to do some cherry drawings, too.
Ok, enough playing with the food. Let’s bake!
INGREDIENTS:
- 2 cups fresh sweet cherries
- 2 tbsp slivered almonds
- 3 large eggs
- 0.5 cup sugar
- 1 tbsp brown sugar
- pinch of salt
- 0.5 cup flour
- 1 cup milk
- 3/4 tsp almond extract
- 1.5 tsp vanilla extract
- Castor sugar, for dusting
Traditionally, the cherries are baked with their stones inside, which is quite fun when you eat a slice of clafoutis in the park and you can throw cherry stones around. But of course, you can take the stones out first, if you prefer.
METHOD
- Preheat the oven to 180°C.
- Scatter all the cherries and almonds over the bottom of a buttered and lightly floured baking dish.
- To make the batter, whisk eggs, granulated sugar, and brown sugar together until combined, then whisk in salt and flour. When smooth, add the milk, almond and vanilla extract.
- Pour the batter into the baking dish, covering the cherries and almonds.
- Bake for about 35 – 45 minutes, until a tester comes out clean. NOTE: I have a slow oven, so it took almost an hour, and was getting quite brown, so I put aluminium foil lightly over the dish.
SERVE
When the clafoutis has cooled, sprinkle caster sugar over the top cut into slices, and serve in the park with friends.
